Job Description

The Kitchen Manager’s primary role is to oversee the day-to-day operation of the restaurant's kitchen, and production and preparation of all foods while assuring quality service and products are provided at required budgetary levels, or better. With a strong focus on customer experience, the Kitchen Manager will perform quality control on food leaving the kitchen, ensure consistency of expectations, and drive overall process efficiency in the kitchen. This position will supervise and coordinate all kitchen staff in accordance with food safety standards and has a direct role in the hiring, training, and scheduling of all kitchen employees.

Responsibilities

  • Works the “Expo/Window” position of the kitchen line during busy times. Oversees the preparation of all food products while following recipes and guidelines. Monitors ticket times and adjust them as needed.
  • Interacts with staff daily, including management and other front-of-the-house employees and kitchen personnel; keeps them informed of all pertinent information.
  • Coordinates human resource functions along with the general manager(s) as they pertain to the kitchen employees, including but not limited to the following: recruiting, interviewing, hiring and terminating employees, overseeing that employee files are kept up to date and that all appropriate information is sent to the proper place, training employees, scheduling employees, performance evaluations of employees, and employee meetings.
  • Review and audit functions, including but not limited to weight tests and reconciliation of food abstract.
  • Oversees the upkeep, cleanliness, and organization of the restaurant kitchen, delivery areas, and waste receptacle areas. Keeps all equipment maintained and repaired as needed.
  • Order and receive food and dry goods orders and verify accuracy of the invoices.
  • Conduct weekly and monthly inventories of food and maintain inventory at or below budgeted levels.
  • Complies with the requirements of the Memphis and Shelby County Health Department. Administers in-house training to kitchen employees on health department regulations.
  • Prepare a kitchen schedule weekly. Adjust labor to the volume where applicable.
  • Prepare daily prep sheets and monitor par levels for food.
  • SCHEDULE WILL VARY, MUST BE FLEXIBLE AND ABLE TO WORK AT LEAST 3-4 NIGHTS PER WEEK.

Qualifications

  • High school diploma or equivalent
  • A certificate of “Serve Safe” or safe food handling certificate equivalent is preferred for the BOH Manager.
  • Three (3) or more years of experience in the restaurant industry. Experience as a Manager is preferred but not required.
  • Work requires the physical demands of standing, walking, bending, stooping, lifting, or performing other tasks that require physical exertion 80% of the time.
  • Excellent interpersonal skills are required and essential for effectively dealing with a diverse group of employees, customers, and suppliers.
